Up North Preppy is requesting some great Holiday cookie recipes. Last night I made Cornflake Wreaths. They are delicious, festive, and a bit unique. B helped me by adding the red hots as I was forming the wreaths. They stay on better if you add them when the wreaths are still hot.
Holiday Cornflake Wreaths
-1 stick butter (margarine can be used also. I only had butter, so that's what I used)
-35 marshmallows
-1 teaspoon vanilla
-green food coloring
-4 cups cornflakes
-Red Hots
*Melt butter over medium heat. Once butter is melted, add marshmallows and melt. Add vanilla, stir, add food coloring. (I just kept adding it until I got the shade of green I liked.) Remove from heat. Mix in cornflakes.
Working quickly, form mixture into wreaths on a sil-pat or parchment paper. Add 2-3 red hots to look like holly berries. Let cool and harden, then you can transfer the wreaths to a storage container.
*My notes: I found the mixture to be very hot right away, so I let it cool (while stirring) for a minute or two. This is very sticky! To combat that, I dipped my fingers in a cup of water before handling the mixture and in between each wreath.
