On Sunday, my aunt gave me some fresh rhubarb from her garden. I made some delicious quick bread with it. Its super simple, and getting rave reviews from my co-workers and husband.
Rhubarb Quick Bread
Ingredients:
1 1/2 c diced raw rhubarb
1 1/2 c brown sugar
2/3 c. oil
1 egg slightly beaten
1 c. sour milk
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. soda
1/2 c. chopped walnuts
pinch cinamon
Topping- 1/3 c. granulated sugar mixed with 1 Tbsp. melted butter.
Mix brown sugar, oil, vanilla & egg together. Sift salt, soda, flour & cinnamon together. Add dry ingredients alternately with milk to other mixture. Fold in rhubarb and nuts. Fill 2 lightly greased loaf pans 2/3 full. Sprinkle with topping. Bake at 325 for 1 hour.
*I think next time I make this, I might add a small amount of lemon juice, so some extra zing.

Yum! I enjoyed making zucchini bread last summer, & I keep seeing rhubarb at the farmers' market. I think it's time to try your new recipe! =p

Well, forgot to pick up ruhbarb to make upnorth. Yesterday, I finally picked some up so I could make this recipe. I think I bought too much, I didn't know how much I needed to buy and bought about a lb. worth - ops! Can't wait to try this recipe!! :)
