So I made the lobster tails last night, and they turned out great! I used this recipe. I was very careful not to overcook them, which would have resulted in us ordering pizza for dinner, because I didn't have anything else planned. Thankfully, I bought a new digital thermometer from Williams Sonoma last weekend, and it came very much in handy!

Cutting the shell off and removing the membrane was a little gross, but not difficult. I got the hang of it by the third tail. The marinade was really good, and I also served some clarified butter for dipping. This kind of upset my stomach, so I will not be dipping next time, and just using the marinade which was plenty anyway.
